Daikon Delight

Tender fermented daikon radish that develops a subtle sweetness and complex flavor profile during fermentation. This versatile side dish pairs well with many meals.

Yield: Approximately 4 cups (1 quart) | Prep time: 15 minutes | Fermentation: 5–10 days

Ingredients

  • 2 pounds daikon radish
  • 4 garlic cloves, sliced
  • 1 tablespoon yellow mustard seeds
  • 1 tablespoon coriander seeds
  • 1 teaspoon turmeric powder
  • ¼ cup unrefined sea salt
  • 4 cups filtered water

Preparation

  1. Prepare brine: Dissolve salt in filtered water.

  2. Prepare radish: Peel and cut daikon into spears or chunks.

  3. Layer the jar: Add garlic, mustard seeds, coriander seeds, and turmeric to the bottom of the jar.

  4. Pack radish: Arrange daikon pieces in the jar.

  5. Cover: Pour brine over daikon until completely submerged. Weight down.

  6. Ferment: Ferment for 5–10 days at room temperature (65°F–75°F / 18°C–24°C).

  7. Refrigerate: Store in the refrigerator when fermentation is complete.

Storage

Refrigerate for up to 3 months.
