Healthy Spinach Artichoke Chicken Casserole
A creamy, comforting casserole that combines the flavors of spinach and artichoke dip with tender chicken. A nutritious one-dish meal that’s sure to please.

Ingredients
- 2 T. extra virgin olive oil
- 2 lbs. chicken breast, cubed
- Sea salt and black pepper, to taste
- 1 medium onion, diced
- 4 cloves garlic, minced
- 10 oz. frozen spinach, thawed and drained
- 14 oz. canned artichoke hearts, drained and chopped
- 1 c. Greek yogurt
- ½ c. heavy cream
- ½ c. Parmesan cheese, grated
- 1 c. mozzarella cheese, shredded
- 1 t. Italian seasoning
- ¼ t. nutmeg
Preparation

Cook chicken: Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper. Cook until golden, approximately 6-8 minutes. Remove and set aside.

Sauté aromatics: In the same skillet, add onion and garlic. Cook until softened, approximately 3-4 minutes.

Add vegetables: Stir in spinach and artichoke hearts. Cook for 2 minutes.

Make sauce: Remove from heat. Stir in Greek yogurt, heavy cream, Parmesan, half the mozzarella, Italian seasoning, and nutmeg.

Combine: Return chicken to skillet and mix until coated.

Transfer & top: Pour mixture into a baking dish. Top with remaining mozzarella.

Bake: Bake at 375°F for 20-25 minutes until bubbly and golden.

Rest & serve: Let sit for 5 minutes before serving.
