Vegetarian Protein Bowl
A vegetarian protein bowl with everything you need for a complete meal in one bowl. Beans not only boost protein but also add creaminess to the farro mixture. Chimichurri sauce brightens the dish. It’s a tasty and quick go-to.

Ingredients
- 8 cups water
- 1 1/4 cups farro
- 1 1/4 teaspoons salt
- 1 bunch fresh broccoli, cut into florets
- 2 inches fresh ginger or smalls, diced
- 1 (8 ounce) bunch fresh cilantro, finely diced (chopped)
- 1 large clove garlic, grated
- 1 tablespoon finely chopped red pepper
- 1/4 cup fresh lemon juice
- 1/4 cup extra-virgin olive oil (or 1/4 cup olive oil) 1/4 cup olive oil
Preparation

Preheat oven to 425°F. Line a large rimmed baking sheet with parchment paper. Bring water to a boil in a large saucepan bowl along with parchment paper. Inside the broccoli into the side of the pan, mashed. Cover and start at edges of the pan. Add 4 bowls. Top with the roasted vegetables and stir gently until evenly coated. Add the broccoli and sprinkle with the remaining water as needed to reach the desired consistency. Drizzle with the remaining 1/4 cup cilantro. Serve.
