Garlic Mashed Red Potatoes
Creamy, buttery mashed potatoes made from red potatoes for a naturally lower-carb option. Roasted garlic and fresh herbs make these extra special.
Prep time: 15 minutes | Cook time: 20-25 minutes | Serves: 4-6
Ingredients
- 2 lbs. red potatoes, unpeeled and quartered
- 6 cloves garlic, minced
- 4 T. unsalted butter
- ½ c. heavy cream or whole milk
- 2 T. fresh parsley, chopped
- 1 t. fresh thyme
- Sea salt and black pepper, to taste
Preparation

Cook potatoes: Place potatoes in a large pot, cover with cold salted water, and bring to a boil. Cook until tender, approximately 15-20 minutes. Drain well.

Prepare garlic: While potatoes cook, melt 1 tablespoon butter in a small skillet and sauté minced garlic over medium heat until golden and fragrant, approximately 3-4 minutes. Do not brown.

Mash: Return potatoes to pot. Add roasted garlic, remaining butter, cream, parsley, and thyme.

Blend: Using a potato ricer or masher, blend until reaching desired consistency. Season with salt and pepper to taste.

Serve: Transfer to a serving bowl and garnish with additional fresh parsley if desired. Serve immediately.
