Prep time: 15 minutes | Cook time: 35-40 minutes | Serves: 4

Ingredients

  • 2 T. extra virgin olive oil
  • 6 boneless, skin-on chicken thighs
  • Sea salt and black pepper, to taste
  • 1 medium onion, sliced
  • 2 bell peppers, sliced
  • 2 c. fresh mushrooms, sliced
  • 4 cloves garlic, minced
  • 1 t. Italian seasoning
  • ½ c. low-sodium chicken broth
  • 1 c. fresh mozzarella, sliced
  • 2 T. fresh basil, chopped

Preparation

  1. Sear chicken: Heat olive oil in a large oven-safe skillet over medium-high heat. Season chicken with salt and pepper. Sear skin-side down for 5 minutes, then flip and cook another 3-4 minutes. Remove and set aside.

  2. Cook vegetables: In the same skillet, add onion, bell peppers, mushrooms, and garlic. Sauté for 5-7 minutes until softened. Stir in Italian seasoning.

  3. Combine: Return chicken to skillet. Add chicken broth and bring to a simmer.

  4. Bake: Transfer to a preheated 375°F oven and bake for 15-20 minutes until chicken is cooked through.

  5. Add cheese: Top each chicken thigh with fresh mozzarella and return to oven for 2-3 minutes until melted.

  6. Finish: Remove from oven, garnish with fresh basil, and serve immediately.
