Savoury Breakfast Bowl Recipe

Breakfast in many parts of the world consists of a savoury meal. This sustains you through the morning and keeps blood sugar level. Here’s one you’re sure to love. For extra protein, consider tossing in some cooked chicken, tofu, or beans — these additions will not only make your breakfast more filling but also provide an extra protein punch.

Serves: 2

Ingredients

  • 1/2 cup quinoa, soaked in hot water for 15 min
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 1 carrot, peeled and finely sliced on the diagonal
  • 1 yellow bell pepper
  • 1 cup mushrooms, sliced
  • 3 pattypan or summer squash, thinly sliced on the diagonal
  • 1 small bunch of kale or Swiss chard, shredded and ribs removed
  • 1 teaspoon cumin seeds
  • Salt and pepper to taste

Preparation

  1. Boil the quinoa for about 10 min until soft.

  2. Drain and set aside.

  3. Use a wok and heat the oil.

  4. Fry the onion and carrot until softened.

  5. Add the pepper, mushrooms and squash and fry until softened.

  6. Add the kale, cumin seeds and seasoning and allow to wilt.

  7. Mix the quinoa through and serve hot.
