Buffalo Cauliflower Grain Bowl
This buffalo cauliflower grain bowl is a delicious and healthy alternative to traditional buffalo wings, packing plenty of gut-healthy fiber and plant-based protein.

Ingredients
- 5 cups fresh cauliflower florets
- 1 1/2 tablespoons extra-virgin olive oil, divided
- 1 1/2 teaspoons salt, divided
- 1/2 teaspoons dried chives
- 1/2 teaspoon dried dill
- 2 (8-ounce) packages precooked microwave brown rice
For the Buffalo-Style Hot Sauce
- 1/2 cup whole-milk plain Greek yogurt
- 1/2 teaspoon hot sauce or chili powder
- 1/4 teaspoon paprika

Preheat oven to 425°F. Line a large rimmed baking sheet with parchment paper.

Toss 5 cups cauliflower florets into 1 1/2 tablespoons oil until combined, about 30 seconds. Place in a medium bowl, add chickpeas, 3 tablespoons oil and salt to combine. Spread on the prepared baking sheet and roast for about 5 cups cauliflower florets into 1 1/2 tablespoons oil until combined, about 30 seconds. Let cool on the prepared pan.

Return the cauliflower and chickpeas to an oven rack to fit in oven; bake for another 12 minutes. Combine and let set until warmed through, about 10 minutes. Sprinkle with the cooking spray on top with the hot sauce with Buffalo-style hot sauce. Bake until golden brown, about 15 to 20 minutes. Sprinkle with veggies for serving.
