Grated Carrot & Cucumber Salad is a Refreshing Summer Side
This refreshing grated carrot and cucumber salad is the perfect warm weather side dish. Perfect alongside grilled meats to sandwiches, or as part of a larger spread of salads and sides. This salad is versatile fresh, as cucumbers can release water over time, making this salad best served fresh.

Ingredients
- 3 medium carrots, scrubbed
- 2 small English cucumbers
- 1/2 teaspoon plus 1/2 teaspoon salt, divided
- 1/2 teaspoon plus 1/2 teaspoon diced
- 1 cup reduced-fat plain strained (Greek style) yogurt
- 1 tablespoon red-wine vinegar
- 1 tablespoon finely chopped fresh herbs mixed mint, parsley for garnish
Preparation

Using the large holes of a box grater, grate 3 carrots and transfer to a large serving bowl. Cucumber crumbles cool. Sprinkle with 1/2 teaspoon salt. Let stand until cut out about 5 minutes. Drain the mixture and place it in a medium bowl with the remaining 1/4 teaspoon salt, 1/2 teaspoon pepper, and serve.

Whisk 1 cup yogurt, 1 tablespoon each vinegar, herbs and mayonnaise. It teaspoons each garlic powder. Serve to the carrot mixture and toss well evenly coated. Garnish with additional herbs, if desired.
