Healthy Chicken Broccoli Casserole
A creamy, protein-rich casserole that’s a healthier take on a classic comfort food. Perfect for weeknight dinners or meal prep.

Ingredients
- 2 T. extra virgin olive oil
- 2 lbs. chicken breast, cubed
- Sea salt and black pepper, to taste
- 1 medium onion, diced
- 4 cloves garlic, minced
- 4 c. fresh broccoli florets
- 1 c. Greek yogurt
- ½ c. low-sodium chicken broth
- ½ c. sharp cheddar cheese, shredded
- ¼ c. Parmesan cheese, grated
- 1 t. Dijon mustard
- ½ t. paprika
Preparation

Cook chicken: Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper. Cook until golden, approximately 6-8 minutes. Remove and set aside.

Sauté aromatics: In the same skillet, add onion and garlic. Cook until softened, approximately 3-4 minutes.

Add broccoli: Add broccoli florets and cook for 4-5 minutes until starting to soften.

Make sauce: In a small bowl, whisk together Greek yogurt, chicken broth, cheddar, Parmesan, mustard, and paprika.

Combine: Return chicken to skillet, pour sauce over everything, and mix until coated.

Transfer & bake: Pour mixture into a baking dish. Bake at 375°F for 20-25 minutes until bubbly.

Rest & serve: Let sit for 5 minutes before serving.
