Quick Fermented Kimchi Mayo

Ingredients
- 1 cup high-quality mayonnaise (homemade or store-bought)
- ¼ cup fermented kimchi, finely minced
- 2 tablespoons kimchi brine
- 1 teaspoon sesame oil
- 1 garlic clove, minced
- 1 teaspoon fresh lime juice
- ½ teaspoon gochugaru (optional, for extra heat)

Mince kimchi: Finely mince fermented kimchi and measure out ¼ cup.

Combine: Whisk together mayonnaise, minced kimchi, kimchi brine, sesame oil, garlic, and lime juice.

Adjust heat: Add gochugaru if extra heat is desired.

Notes
