Paleo Cauliflower Rice Pasta

A grain-free, Paleo-friendly pasta alternative that uses cauliflower rice as the base. Light, nutritious, and surprisingly satisfying.

Prep time: 10 minutes | Cook time: 5-10 minutes | Serves: 2

Ingredients

  • 3 c. cauliflower rice (fresh or frozen)
  • 2 T. extra virgin olive oil
  • 3 cloves garlic, minced
  • 1 c. cherry tomatoes, halved
  • ¼ c. fresh basil leaves
  • 2 T. pine nuts or walnuts, toasted
  • Sea salt and black pepper, to taste
  • Zest of 1 lemon

Preparation

  1. Heat oil: Heat olive oil in a large skillet over medium-high heat.

  2. Cook cauliflower: Add cauliflower rice and sauté for 3-4 minutes, stirring frequently.

  3. Add garlic: Add minced garlic and cook for 1 minute until fragrant.

  4. Add tomatoes: Add cherry tomatoes and cook for 2-3 minutes until they begin to blister.

  5. Finish: Remove from heat. Stir in fresh basil, nuts, and lemon zest. Season with salt and pepper.

  6. Serve: Divide between plates and serve immediately.

Notes

This recipe is inspired by traditional Paleo and gluten-free cooking principles. Toss with your favorite protein for a complete meal.
